For the Crust:
- 1 ½ cups (180g) graham cracker crumbs
- ¼ cup (50g) sugar
- ½ cup (115g) melted butter
For the Cheesecake Filling:
- 3 (8 oz.) packages (680g) cream cheese, softened
- 1 cup (200g) sugar
- 3 large eggs
- 1 cup (240ml) heavy cream
- 1 tablespoon vanilla extract
- 1 tablespoon cornstarch or flour
For the Caramelized Sugar Topping:
- ¼ cup (50g) granulated sugar
👨🍳 Instructions
1️⃣ Prepare the Crust:
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
- Press the mixture into the bottom of a 9-inch (23 cm) springform pan.
- Bake for 10 minutes, then let cool.
2️⃣ Make the Cheesecake Filling:
- In a large bowl, beat cream cheese and sugar until smooth.
- Add eggs, one at a time, mixing on low speed.
- Stir in vanilla extract, heavy cream, and cornstarch/flour until fully combined.
