Ingredients:

  • 1 small zucchini, grated and squeezed to remove excess moisture
  • 1 small carrot, grated
  • eggs, beaten
  • 1/4 cup fresh parsley, finely chopped
  • 2 tbsp fresh dill, finely chopped (optional)
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes (optional, for a little spice)
  • 1/2 tsp salt (adjust depending on the saltiness of your feta)
  • 1/2 cup flour (or use breadcrumbs for extra crispiness)
  • 1/2 tsp baking powder
  • 1/4 cup milk (if needed, to adjust consistency)
  • Oil for frying
