- 1 egg
- 200 g flour
- Β½ packet baking powder (approx. 6 g)
- 1 pinch of salt

1. Prepare the Shortbread Cookies:
- Preheat the oven to 180Β°C (350Β°F).
- In a mixing bowl, cream the softened butter with the sugar until light and fluffy.
- Add the egg and mix well.
- Sift in the flour, baking powder, and salt. Mix until a smooth dough forms.
- Roll out the dough on a floured surface to about Β½ cm thickness.
- Cut out cookies using your preferred shapes.
- Place on a baking tray lined with parchment paper and bake for 10β12 minutes or until lightly golden.
- Let cool completely.
2. Prepare the Strawberry Tartare:
- In a bowl, mix the diced strawberries with sugar and lemon juice.
- Let marinate in the fridge for 15β20 minutes to allow the flavors to blend.
3. Assemble the Dessert:
- On each plate or in small dessert glasses, spoon a generous layer of the strawberry tartare.
- Sprinkle with chopped pistachios for crunch and flavor.
- Crumble a few shortbread cookies over the top or serve whole cookies on the side for dipping.
