Strawberry, Pistachio & Shortbread Tartare

For the Tartare:

  • 400 g fresh strawberries, hulled and finely diced
  • 2 tablespoons sugar
  • Juice of 1 lemon
  • 50 g shelled pistachios, roughly chopped

For the Shortbread Cookies:

  • 100 g butter, softened
  • 100 g sugar
  • 1 egg
  • 200 g flour
  • Β½ packet baking powder (approx. 6 g)
  • 1 pinch of salt

1. Prepare the Shortbread Cookies:

  1. Preheat the oven to 180Β°C (350Β°F).
  2. In a mixing bowl, cream the softened butter with the sugar until light and fluffy.
  3. Add the egg and mix well.
  4. Sift in the flour, baking powder, and salt. Mix until a smooth dough forms.
  5. Roll out the dough on a floured surface to about Β½ cm thickness.
  6. Cut out cookies using your preferred shapes.
  7. Place on a baking tray lined with parchment paper and bake for 10–12 minutes or until lightly golden.
  8. Let cool completely.

2. Prepare the Strawberry Tartare:

  1. In a bowl, mix the diced strawberries with sugar and lemon juice.
  2. Let marinate in the fridge for 15–20 minutes to allow the flavors to blend.

3. Assemble the Dessert:

  1. On each plate or in small dessert glasses, spoon a generous layer of the strawberry tartare.
  2. Sprinkle with chopped pistachios for crunch and flavor.
  3. Crumble a few shortbread cookies over the top or serve whole cookies on the side for dipping.

  • Add a dollop of whipped cream or a scoop of vanilla ice cream on top for extra indulgence.
  • Use mint leaves for garnish and a touch of freshness.
